Caring for your truffle
Immediately on your arrival home, remove your truffle from its foil bag and remove the paper toweling.
Place some fresh paper towel in the base of a sealable glass jar and place your truffle on the paper towel in the glass jar. Then place the lid on the glass jar and store the truffle in the jar in the fridge. (Do not freeze)
Each day you will need to remove the truffle from the jar and replace the paper towel with fresh paper toweling (as the toweling becomes damp.) The reason for this is the truffle will sweat, and the moisture needs to be absorbed to keep the truffle fresh.
The shelf life for a truffle is a maximum of 12 days, and must be kept in the fridge.

When you buy a truffle it will have been cut. This is to expose the colour of the truffle which is normal procedure. Black inside represents mature, while light to mid grey inside the truffle is an immature truffle.
Truffles are often cut if affected by frost burn, or if they have been growing in an awkward position amongst the tree roots, resulting in the truffle having to be broken. This often happens with the larger truffle.
All blemishes are removed and imperfections are cut away so you are only paying for quality truffle.
